If you buy one, buy this. Balanced enough for pork, beef, chicken and vegetables.
Built for skin
Seasoned to crisp skin rather than overwhelm lean meat. Whole birds, thighs and wings.
Sweet, then heat
The classic competition profile — sugar-forward with a pepper finish. Ribs and pork shoulder.
Restraint
Salt, pepper, garlic. For steak and anything where you want the meat to be the loudest thing on the plate.
Kansas City style
Sweeter and tomato-leaning, made to pair with a thick sauce. Ribs and chicken.

For most cuts, 30 to 60 minutes before cooking is plenty. For large cuts like pork shoulder or brisket, overnight in the refrigerator is better.
A thin layer of mustard or oil helps the rub stay put on large cuts. On a burger or a steak it is unnecessary.
