Common questions

When do I apply a rub?

For most cuts, 30 to 60 minutes before cooking is plenty. For large cuts like pork shoulder or brisket, overnight in the refrigerator is better.

Do I need a binder?

A thin layer of mustard or oil helps the rub stay put on large cuts. On a burger or a steak it is unnecessary.
